Quick Coffee Cake

Yields: 4 Servings

Ingredients:

  • 1 ½ cups sifted flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 egg
  • 2/3 cup milk
  • 1/3 cup honey
  • 3 tablespoons melted shortening

Directions:

Sift together dry ingredients. Beat egg and add to dry ingredients. Add milk, honey and melted shortening. Stir into dry ingredients. Mix lightly (only enough to moisten flour). Spread in lightly greased 8-inch square pan. Cover batter with Honey Topping. Bake in hot oven (400 degrees F) 25 – 30 minutes.
