Carrot-Raisin Salad

Yields: 6 Servings

Ingredients:

  • 3 cups grated carrots
  • 1 cup seedless raisins
  • 1 Tablespoon honey
  • ¼ cup milk
  • 1 Tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon nutmeg

Directions:

Toss the carrots lightly with the raisins. Blend the remaining ingredients; stir into the carrot mixture. Chill for at least 30 minutes before serving.
