Confetti Waldorf Salad

Yields: 4 Servings

Ingredients:

2 cups grated carrots
2 medium apples, diced
½ cup chopped pecans
1 cup thinly sliced celery
½ cup thinly sliced radishes
¼ cup mayonnaise
2 teaspoon honey
½ teaspoon salt
1 Tablespoon cream
2 teaspoon lemon juice

Directions:

Combine first 5 ingredients. Blend remaining ingredients. Pour over carrot mixture, tossing to mix well.
